  • 1 lb beef (cut into cubes) Feel free to swap beef with mushrooms for a vegetarian version.
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 2 large bell peppers (sliced)
  • 2 cups mushrooms (sliced)
  • 2 cups beef broth Different types of broth can be used for a unique twist.
  • 1 cup sour cream Greek yogurt can be used instead for a lower-fat option.
  • 2 tbsp flour Gluten-free? Substitute with cornstarch.
  • 2 tbsp paprika Don't skip this; it's the star of the dish!
  • to taste Salt and pepper
  • as needed Olive oil for cooking
  • for serving Noodles or crusty bread Garnish with fresh parsley or smoked paprika for added flavor.

Cooking

  • Heat olive oil in a large pot over medium heat.
  • Add the beef cubes, cooking until browned on all sides.
  • Remove the beef and set it aside.
  • In the same pot, sauté the onion and minced garlic until translucent.
  • Toss in the bell peppers and mushrooms, cooking until softened.
  • Stir in the beef, along with paprika, flour, and beef broth. Mix well.
  • Bring to a simmer, cooking for about 30 minutes until the beef is tender.
  • Stir in the sour cream, then season with salt and pepper to taste.
  • Serve over noodles or with a slice of crusty bread.

Notes

Store leftovers in an airtight container in the refrigerator and consume within three to four days. Can be frozen for up to three months.
