  • 2 cups cooked shredded chicken Use rotisserie chicken for time-saving.
  • 1 can (10.5 oz) cream of chicken soup Look for organic or low-sodium options.
  • 1 cup sour cream Greek yogurt can be used as a substitute.
  • 1 cup shredded cheddar cheese Sharp cheddar for a more potent flavor.
  • 2 cups cooked pasta Penne or rotini recommended.
  • 1/2 cup frozen peas Optional addition.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper
  • 1/2 cup breadcrumbs For topping.
  • 2 tablespoons butter Melted for topping.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked shredded chicken, cream of chicken soup, sour cream, shredded cheddar cheese, garlic powder, onion powder, salt, pepper, and cooked pasta. If including peas, fold them in gently.
  • Carefully transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.
  • In a small bowl, mix the breadcrumbs with melted butter, then sprinkle the breadcrumb mixture evenly over the casserole.

Baking

  • Bake the casserole in the preheated oven for 25-30 minutes, or until it’s bubbly and the top is golden brown.

Serving

  • Remove the casserole from the oven and allow it to cool slightly before serving.

Notes

Store leftover casserole in an airtight container in the fridge for up to 3 days. Can be frozen in portions. For reheating, bake at 350°F (175°C) until warmed through or use the microwave.
