Creamy Cajun Chicken Pasta

Ingredients
  

  • 1 lb chicken breast or thighs, cut into pieces
  • 8 oz penne pasta
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Cook penne pasta al dente according to package instructions, drain and set aside.
  • Heat olive oil in a skillet over medium-high heat. Toss chicken with Cajun seasoning, cook until browned and cooked through. Remove and set aside.
  • In the same skillet, sauté garlic and onions until fragrant.
  • Add heavy cream, chicken broth, and Parmesan cheese. Let simmer till sauce thickens.
  • Return chicken and cooked pasta to the skillet. Toss well to coat with sauce. Season with salt and pepper.
  • Garnish with fresh parsley and serve immediately.

Notes

For a spicy kick, add extra cayenne or hot sauce. Substitute shrimp or sausage for chicken for variations. Use half & half or coconut milk for lighter versions.
