Creamy Butternut Squash Gnocchi with Sausage, Thyme, and Sage

Ingredients
  

  • 1 lb gnocchi (store-bought or homemade)
  • 2 cups butternut squash, peeled and cubed
  • 2 tbsp olive oil
  • 0.5 lb Italian sausage
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup heavy cream (or light cream)
  • 0.5 cup chicken or vegetable broth
  • 0.5 cup Parmesan cheese, grated
  • 1 tsp fresh thyme leaves
  • 1 tsp fresh sage, chopped
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions
 

  • Preheat oven to 400°F (200°C). Toss squash with olive oil, salt, and pepper, then roast for 20–25 minutes until tender.
  • Cook gnocchi in salted boiling water until they float, then drain and set aside.
  • In a skillet, cook sausage until browned. Remove and set aside.
  • In the same skillet, sauté onion and garlic. Add roasted squash, cream, broth, Parmesan, thyme, and sage. Mash some squash into sauce for creaminess.
  • Return sausage and gnocchi to skillet. Toss to coat and garnish with parsley and Parmesan.

Notes

For a vegetarian option, skip the sausage or use a plant-based substitute. To make it healthier, use light cream and turkey sausage.
