Filling Ingredients

  • 1 cup pastry cream or vanilla pudding Store-bought vanilla pudding works as a quick substitute.
  • 1/4 cup granulated sugar (for caramelizing)

Preparation

  • Preheat the oven to 350°F (175°C).
  • Cream together the softened butter and sugar in a large mixing bowl until light and fluffy.
  • Incorporate the egg and vanilla extract, mixing until just combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mix to the wet ingredients, stirring until just combined.

Baking

  • Scoop tablespoon-sized amounts of dough onto lined baking sheets, ensuring enough space between each cookie.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool completely on the baking sheets.

Filling and Caramelizing

  • Fill the center of each cookie with pastry cream once they’ve cooled.
  • Sprinkle a thin layer of sugar on top of the cream, then use a kitchen torch to caramelize the sugar until it turns golden and crispy.
  • Let cool slightly before serving.

Notes
