  • 1/2 cup dried cranberries, chopped Fresh cranberries are too tart; use dried for sweetness.
  • 1/2 cup pecans, finely chopped Alternatively, use walnuts or almonds.
  • 1 tablespoon honey Adjust the amount based on sweetness preference.
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh herbs (optional, for garnish)

Preparation

  • In a mixing bowl, combine the goat cheese, chopped cranberries, honey, salt, and black pepper. Mix until well combined.
  • Form the mixture into small balls (about 1 inch in diameter).
  • Roll each ball in the chopped pecans to coat.
  • Chill the truffles in the refrigerator for about 30 minutes before serving.
  • Garnish with fresh herbs if desired.

Notes

These truffles can be served with crackers, fresh fruit, or on their own. Store in an airtight container in the refrigerator for up to a week.
