Ingredients
  

Turkey and Marinade

  • 1 3-4 lb turkey breast, bone-in and skin-on
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • to taste Salt and pepper

Cranberry Orange Glaze

  • 2 cups fresh cranberries
  • 1 cup orange juice
  • ½ cup honey
  • 2 tablespoons orange zest

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a saucepan, combine cranberries, orange juice, honey, and orange zest. Bring to a boil, then simmer for 10-15 minutes until thickened.
  • Pat the turkey dry and mix olive oil, garlic, rosemary, thyme, salt, and pepper together. Rub this mixture under and over the turkey skin.

Cooking

  • Roast the turkey skin side up, cooking for about 20 minutes per pound, until it reaches an internal temperature of 165°F.
  • Brush the turkey with the glaze every 10 minutes during the last 30 minutes of cooking.

Serving

  • Let the turkey rest for 15-20 minutes before carving. Serve with additional glaze.

Notes

For extra flavor, consider brining the turkey breast beforehand. If you want a crispier skin, you can broil the turkey for the last few minutes of cooking, but watch it closely to avoid burning.
