Instructions
 

Preparation

  • Heat 1–2 tablespoons of olive oil in a skillet over medium heat. Add the diced onion and sauté until translucent, about 3–5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  • Add the ground beef and break it apart with a spatula, cooking until fully browned. Season with salt, black pepper, and paprika as it cooks.
  • Stir in the diced green chiles and the cup of tomato sauce. Reduce the heat to low and let the mixture simmer for 5–7 minutes to marry the flavors and thicken slightly.

Assembly

  • Lightly grease a casserole dish with olive oil or non-stick spray. Spread the cooked beef mixture evenly across the bottom of the dish.
  • Arrange the frozen tater tots in a single, tight layer over the beef to cover the surface.
  • Generously sprinkle the shredded cheddar cheese over the tater tots.

Baking

  • Preheat the oven to 375°F (190°C). Place the casserole uncovered in the oven and bake for 25–30 minutes until the tater tots are golden brown and the cheese is bubbly.
  • For extra crispiness, broil for 2–3 minutes at the end—watch closely to avoid burning.

Notes

Cool the casserole completely before storing. Keep refrigerated up to 3–4 days; reheat in the microwave or oven.
