  • 1 lb ground beef Use 80/20 for flavor or 90/10 for a leaner option.
  • 1 can corn, drained Can use fresh or frozen corn.
  • 1 cup shredded cheese (cheddar or your choice) Shred from a block for better melting.
  • 1 package tater tots (about 32 oz) Standard frozen bag for best results.
  • 1 medium onion, chopped Adds sweetness and depth of flavor.
  • 1 packet taco seasoning Use one packet for balanced heat.
  • Salt and pepper to taste Adjust according to preference.
  • Optional toppings: chopped green onions, sour cream For garnish before serving.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Grease a baking dish.
  • Heat a large skillet over medium heat. Add ground beef and chopped onion, cooking until fully browned.
  • Drain excess fat from the skillet.
  • Stir in taco seasoning and corn, season with salt and pepper. Mix well.

Assembly

  • Spread the beef and corn mixture evenly into your greased baking dish.
  • Sprinkle shredded cheese evenly over the beef layer.
  • Arrange tater tots in a single layer on top of the cheese.

Baking

  • Bake in the preheated oven for 25–30 minutes or until tater tots are golden brown and crispy.
  • Once baked, remove and let rest briefly before serving.

Serving

  • Garnish with chopped green onions and sour cream if desired, then slice and serve.

Notes

Store leftovers in the refrigerator and reheat for best results. When assembling ahead of time, refrigerate before baking and let it come to room temperature before cooking.
