  • 1 cup full-fat cottage cheese, drained well Choose a brand with small curds and thick, creamy whey.
  • 1/2 cup cornstarch Use regular cornstarch, not tapioca or potato starch.

Preparation

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Place the cottage cheese in a fine-mesh sieve lined with a paper towel. Let it drain over a bowl for 15–30 minutes.
  • Combine the drained cottage cheese and cornstarch in a bowl and stir until the mixture is smooth and slightly thick.
  • Use a spoon or cookie scoop to form the mixture into 1-inch balls and place them on the prepared baking sheet.

Baking

  • Bake at 400°F (200°C) for 20–25 minutes, rotating the pan halfway through.
  • Allow the tots to cool for a few minutes before serving.

Notes

For best texture, avoid overcrowding the baking sheet. Try serving with a tangy yogurt-dill dip or spicy ketchup.
