  • 2 slices slices of bread (whole grain, sourdough, or your favorite artisan loaf) Choose a sturdy slice to hold toppings.
  • 1/2 to 1 cup cottage cheese (small or large curds; full-fat or low-fat depending on preference) A generous layer is recommended.
  • 1 ripe avocado Must be ready-to-eat: yields slightly with gentle pressure.
  • 1-2 tablespoons hot honey Store-bought or homemade; heat honey gently with chili flakes.
  • Salt and freshly ground black pepper To taste.

Preparation

  • Toast the bread until it’s golden and crisp at the edges.
  • Cut the avocado in half, remove the pit, and scoop into a bowl. Mash with a fork until mostly smooth but slightly chunky. Season with a pinch of salt and several grinds of black pepper.

Assembly

  • Spread a generous layer (about 1/4 to 1/2 cup) of cottage cheese evenly over each slice of toast.
  • Pile the mashed avocado on top of the cottage cheese, spreading gently so the toast doesn’t break.
  • Drizzle hot honey over the avocado in a thin stream; start with a little — you can always add more.
  • Serve immediately so the bread stays crisp.

Notes

Enjoy while warm. For variations, add smoked salmon or cherry tomatoes on top. Store components separately; assembled toast is best eaten immediately.
