  • 1 cup cottage cheese (full-fat or low-fat) For a smoother crust, use small-curd cottage cheese or pulse in a blender.
  • 1 cup all-purpose flour Can substitute with a gluten-free flour blend.
  • 1 large egg Egg can be replaced with a substitute for vegan options.

Preparation

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a medium bowl, add the cottage cheese, flour, and egg. Stir until evenly combined.
  • Spread the mixture onto the lined baking sheet into an even circle or rectangle about ¼–½ inch thick.

Baking

  • Bake for 15–20 minutes, watching for golden edges and a set center.
  • Remove from the oven and add sauce, shredded cheese, and your favorite toppings.
  • Return to the oven for about 10 minutes, or until the cheese melts and toppings are heated through.
  • Let the pizza rest for a few minutes, then slice and serve.

Notes

Store leftovers in an airtight container for 3–4 days in the refrigerator. For reheating, use a 375°F (190°C) oven for 8–10 minutes to retain crispness.
