Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment.
  • In a blender or food processor, add the cottage cheese, eggs, salt, garlic powder, onion powder, and Italian seasoning.
  • Pulse until the mixture is smooth and homogenous; you want no visible curds left.
  • If using parmesan or baking powder, add them and give one final quick pulse.

Shape and Bake

  • Spoon the batter onto the prepared sheet and spread it with a spatula into a roughly 8–10 inch circle or into two smaller ovals.
  • Smooth the top to an even thickness.
  • Sprinkle extra parmesan or a pinch of Italian seasoning on top if desired.
  • Bake for 12–18 minutes until the edges are golden and the center is set.

Cooling and Serving

  • Remove from oven and let cool on the sheet for 5 minutes to firm up.
  • Transfer to a wire rack if you want crisper bottoms, or top immediately while warm.
  • Serve savory or sweet as desired.

Notes

For extra-crispy bottoms, move the pan to a lower rack for the last 2–3 minutes. Store leftovers wrapped in parchment to prevent sticking.
