  • ½ cup cottage cheese Use low-fat or fat-free for a healthier choice.
  • 1 large egg Acts as a binder; can substitute with flaxseed meal.
  • ½ cup panko breadcrumbs Use gluten-free if necessary.
  • 1 clove garlic, minced
  • ¼ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp chopped parsley Optional, for added flavor.
  • 1 tbsp olive oil For cooking the patties.

Preparation

  • In a large bowl, gently mix together the ground chicken, cottage cheese, egg, and panko breadcrumbs.
  • Add in the minced garlic, onion powder, salt, pepper, and parsley if using. Combine thoroughly yet gently to avoid overmixing.

Forming Patties

  • Divide the mixture into six equal portions and shape them into patties about ½ inch thick.

Cooking

  • In a skillet, heat the olive oil over medium heat. Once hot, place the patties in the skillet.
  • Cook them for about 4–5 minutes on each side until golden brown and cooked through.
  • Alternatively, preheat your oven to 400°F and bake the patties on a parchment-lined baking sheet for 18–20 minutes, flipping once halfway.

Serving

  • Allow the patties to rest for about 5 minutes before serving to retain their moisture.
  • Serve with a dipping sauce like tzatziki or alongside a fresh salad.

Notes

For optimal storage, keep cooked patties in an airtight container in the fridge for up to four days. Freeze pre-cooked patties for up to three months.
