  • 8 oz pasta High-quality pasta such as fettuccine or penne
  • 1 lb chicken breast, diced Can substitute with thighs or shrimp
  • 2 cups spinach Fresh spinach is preferred for color and nutrition
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream Substitutable with half-and-half for a lighter version
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced Be cautious, garlic can burn quickly
  • 1 tsp Italian seasoning
  • to taste Salt and pepper
  • 2 tbsp olive oil For sautéing chicken

Preparation

  • In a large pot, heat the olive oil over medium heat until it shimmers but does not smoke.
  • Add the diced chicken, season with salt, pepper, and Italian seasoning. Cook until browned.
  • Toss in the minced garlic and sauté for 1-2 minutes until fragrant.
  • Pour in the chicken broth and let the mixture come to a simmer.
  • Stir in the pasta, heavy cream, spinach, and cherry tomatoes until well combined.
  • Cook according to the pasta package instructions until al dente.
  • Remove from heat and stir in the grated Parmesan cheese until melted.
  • Serve warm, garnished with additional Parmesan if desired.

Notes

The dish can be refrigerated for up to three days or frozen for up to three months. Reheat after thawing with a splash of chicken broth to restore creaminess.
