Ingredients
  

For the banana bread

  • 3-4 medium or large bananas Make sure they are well-ripened for the sweetest flavor.
  • 2 Tbsp brown sugar
  • 1.5 tsp vanilla extract
  • 0.75 tsp ground cinnamon
  • 0.5 cup butter, softened Can be substituted with coconut oil for a dairy-free option.
  • 1 cup sugar
  • 2 large eggs Can be substituted with flaxseed meal or applesauce for a vegan option.
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.25 tsp salt
  • 2 Tbsp sour cream Can substitute with Greek yogurt.

For the crumb topping

  • 1 cup flour
  • 1 cup brown sugar
  • 6 Tbsp butter, cold

Preparation

  • Preheat your oven to 350°F (175°C). Grease two 8×4-inch bread pans to prevent sticking.
  • In a small bowl, mash the bananas with the brown sugar, vanilla extract, and ground cinnamon until smooth.
  • In a separate large bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the eggs until the mixture is fully combined.
  • Sift in the flour, baking soda, and salt, mixing until just combined.
  • Stir in the sour cream until the batter is smooth.
  • Gently fold in the mashed banana mixture until well blended.

Crumb Topping and Baking

  • For the crumb topping, combine 1 cup of flour, 1 cup of brown sugar, and 6 tablespoons of cold butter in a bowl. Mix until crumbly.
  • Pour the batter evenly into the prepared pans. Top generously with the crumb topping.
  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.

Notes

This Coffee Cake Banana Bread is best served warm. Great with cream cheese or butter. Store leftovers in an airtight container at room temperature for up to three days, or freeze for up to three months.
