  • 3 pieces ripe bananas Use very ripe bananas for the best flavor.
  • 1/3 cup honey Can be swapped with maple syrup.
  • 1/4 cup melted butter
  • 1 piece egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup all-purpose flour Can be substituted with gluten-free flour.

Preparation and Baking

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  • Stir in the melted butter until well combined.
  • Mix in the honey, egg, and vanilla extract until fully incorporated.
  • Sprinkle the baking soda and a pinch of salt over the mixture and stir in.
  • Add the flour and stir just until combined; take care not to overmix.
  • Pour the batter into a greased loaf pan, spreading evenly.
  • Bake in the preheated oven for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Serve warm with a pat of butter, or pair with tea or coffee. Freeze slices wrapped tightly for later enjoyment.
