Ingredients
  

  • 2 medium zucchinis grated
  • 1 cup sugar brown or white
  • 2 large eggs
  • 1/2 cup melted butter or oil not olive oil
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Hefty pinch cinnamon
  • 1 cup chocolate chips

Instructions
 

  • Shred the zucchini using a cheese grater. Press lightly with a paper towel if it's very drippy.
  • In a large bowl, combine the eggs, sugar, melted butter or oil, and vanilla. Mix with a wooden spoon.
  • Add the grated zucchini and stir gently until combined.
  • Mix in the flour, baking powder, baking soda, salt, and cinnamon over the wet ingredients and stir until just combined.
  • Fold in the chocolate chips.
  • Pour the mixture into a greased loaf pan and optionally sprinkle extra sugar on top.
  • Bake at 350°F for about 45-50 minutes, checking with a toothpick after 45 minutes.
  • Allow to cool before serving.

Notes

Serve warm with milk or toast slices with peanut butter for an extra treat. Also suitable for freezing.
