  • 1 medium Onion for a savory base
  • 2 cloves Garlic adds a punch of warmth
  • 8 cups Chicken broth the soul of the soup
  • 1 tbsp Olive oil for sautéing
  • 1 tbsp Dried thyme to brighten the flavors
  • 1 tsp Salt to season
  • 1 tsp Black pepper to season

Preparation

  • Heat a large pot over medium heat and add a splash of olive oil.
  • Sauté the onions, garlic, carrots, and celery until they soften—about 5-7 minutes.
  • Add the chicken breasts and pour in the chicken broth. Season with thyme, salt, and pepper.
  • Bring to a boil, then reduce the heat and simmer for about 20 minutes, until the chicken is cooked through.
  • Remove the chicken, shred it, and return it to the pot.
  • Stir in the egg noodles and cook until they’re tender, about 7-10 minutes.
  • Adjust seasoning as necessary, then remove from heat.

Notes

For a side, consider crusty bread or a light salad. A drizzle of lemon juice adds a refreshing twist.
