  • 1 pack Lo Mein noodles (fresh or dried)
  • 1 piece red bell pepper chopped
  • 1 piece yellow bell pepper chopped
  • 2 pieces carrots thinly sliced
  • 2 pieces green onions chopped

Sauce and Seasonings

  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Preparation

  • Gather all your ingredients and chop the vegetables into bite-sized pieces.

Cooking Noodles

  • Cook the lo mein noodles according to package instructions until al dente, then drain and set aside.

Sautéing Chicken

  • Heat a large skillet or wok over medium-high heat. Add oil and sauté the chicken until golden brown and fully cooked, about 6-8 minutes. Remove the chicken from the skillet and set aside.

Stir-frying Vegetables

  • In the same pan, stir-fry the bell peppers, carrots, and green onions until tender but still crisp, approximately 3-4 minutes.

Combining Ingredients

  • Return the cooked chicken to the skillet with the vegetables. Add the lo mein noodles, soy sauce, sesame oil, minced garlic, and any additional spices you desire. Toss everything together until well mixed.

Serving

  • Serve hot, offering extra soy sauce on the side if desired.

Notes

For best results, ensure the skillet is hot enough for sautéing chicken, and don’t overcook the vegetables to keep them crisp. You can customize this recipe with different proteins or vegetables as desired.
