Filling Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup cheese (cheddar or Mexican blend)
  • 1/2 cup refried beans
  • 1/2 cup salsa
  • 4 large flour tortillas
  • Oil for frying
  • Seasoning: cumin, garlic powder, salt, pepper Feel free to adjust seasonings.

Preparation

  • In a large bowl, combine the shredded chicken, cheese, refried beans, salsa, and seasonings. Mix until well blended.
  • Warm the tortillas in a dry pan for a few seconds on each side to make them pliable.
  • Take a generous portion of the chicken mixture and place it in the center of each tortilla.
  • Roll up the tortillas tightly, folding in the sides to enclose the filling securely.
  • Heat oil in a deep frying pan over medium heat.
  • Carefully add the chimichangas one by one, frying until they're golden brown and crispy on all sides.
  • Remove from the oil and drain on paper towels. Serve with additional salsa or sour cream for dipping.

Notes

Chicken chimichangas can be served with a fresh salad, Mexican rice, or tortilla chips and guacamole. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
