  • 1 3/4 cups packed light brown sugar
  • 1 large egg
  • 1 egg yolk
  • 1 tablespoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  • In a large mixing bowl, combine the melted unsalted butter and light brown sugar. Whisk until smooth and glossy.
  • Stir in the large egg, egg yolk, and vanilla extract until fully incorporated.

Mixing and Baking

  • Gradually add the dry flour mixture to the wet ingredients. Stir until just combined to avoid overmixing.
  • Scoop the cookie dough into 1 1/2 tablespoon-sized balls and place them about 2 inches apart on the prepared baking sheets.
  • Bake for 10–12 minutes or until the edges are lightly golden while the centers still look soft.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For extra chewiness, chill the dough for about 30 minutes before baking. Avoid overbaking; the cookies will continue to cook on the baking sheet even after being taken out of the oven.
