Cheesy Ranch Potatoes and Smoked Sausage

Ingredients
  

  • 2 lbs baby potatoes, halved
  • 14 oz smoked sausage, sliced
  • 2 tbsp olive oil
  • 1 packet ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup mozzarella cheese (optional)
  • 2 tbsp chopped parsley
  • salt and pepper, to taste

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Toss halved potatoes with olive oil, ranch seasoning, salt, and pepper.
  • Add sliced smoked sausage and mix well.
  • Spread mixture in a greased baking dish and bake 35–40 minutes, stirring halfway.
  • Sprinkle with cheese and return to oven until melted and bubbly.
  • Garnish with parsley and serve hot.

Notes

For a spicier dish, use andouille sausage or add chili flakes. This recipe can also be made in a slow cooker.
