  • 2 medium potatoes, diced
  • 4 large eggs
  • 1 cup shredded cheddar cheese Feel free to swap with your favorite cheese.
  • 1/2 cup diced ham or bacon Optional for added flavor.
  • 1 tablespoon olive oil or butter For cooking the potatoes.
  • Salt and pepper to taste

Cooking

  • Heat the olive oil or butter in a large skillet over medium heat.
  • Add the diced potatoes and cook, stirring occasionally, until they are crispy and golden, about 10 minutes.
  • If using, add diced ham or bacon to the skillet and cook for an additional 2-3 minutes.
  • In a bowl, whisk together the eggs and season with salt and pepper.
  • Pour the egg mixture over the potatoes and ham in the skillet. Cook gently, stirring as needed, until the eggs are fluffy and fully cooked.
  • Remove the skillet from heat and sprinkle the shredded cheddar cheese over the top. Serve warm.

Notes

Can be topped with fresh herbs or paired with toast. Storing leftovers in an airtight container for up to 3 days is recommended. Reheat thoroughly.
