  • 1 lb ground beef Can substitute with ground turkey or chicken.
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 cup long-grain rice, uncooked Can substitute with brown rice.
  • 2 cups beef broth
  • 1 can cream of mushroom soup (10.75 oz)
  • 1 cup cheddar cheese, shredded For a twist, try different cheeses.
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup fresh parsley, chopped For garnish.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned. Drain any excessive fat.
  • Stir in the uncooked rice, beef broth, and cream of mushroom soup. Season with salt, black pepper, and paprika, then bring to a boil. Reduce heat and simmer for about 5 minutes.
  • Transfer the mixture to the greased baking dish. Cover with aluminum foil and bake for 25 minutes.
  • Remove the foil, sprinkle the shredded cheddar cheese on top, and return to the oven to bake uncovered for an additional 10-15 minutes, until the cheese is melted and bubbly.
  • Garnish with chopped parsley before serving.

Notes

Store leftovers in an airtight container. Refrigerate within 2 hours; lasts 3-4 days. Can freeze for 2-3 months. Reheat until internal temperature reaches 165°F.
