Ingredients
  

  • 4 russet potatoes, peeled and cubed
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup milk
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup light cream or half-and-half
  • 1 tsp dried thyme
  • 1/2 tsp parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped chives or green onions

Instructions
 

  • Sauté onion and garlic in oil and butter until fragrant.
  • Add potatoes, herbs, salt, pepper, and broth. Simmer 25 minutes.
  • Blend half the soup for creaminess.
  • Stir in milk, cream, and cheddar until melted and smooth.
  • Garnish with chives and serve warm.

Notes

For extra flavor, add roasted garlic or smoked paprika. Freezes well for up to 2 months.
