Ingredients
  

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 medium russet potatoes, peeled and cubed
  • 4 cups chicken or vegetable broth
  • 1 cup milk or half-and-half
  • 2 cups sharp cheddar cheese, shredded
  • 1 tsp dried thyme (or 2 tsp fresh)
  • 1 tsp dried parsley (or 2 tbsp fresh)
  • salt and pepper, to taste
  • optional toppings: bacon, green onions, extra cheddar

Instructions
 

  • In a large pot, melt butter with olive oil. Add diced onion and cook until softened.
  • Stir in garlic and cook 1 minute until fragrant.
  • Add cubed potatoes and broth. Simmer 15–20 minutes until tender.
  • Blend part of the soup for creaminess, leaving some chunks.
  • Stir in milk, cheddar, thyme, and parsley. Season with salt and pepper.
  • Serve hot with toppings like bacon or green onions.

Notes

For extra creaminess, substitute half the broth with heavy cream. Make vegetarian by using veggie broth and skipping bacon.
