Pastry and Filling

  • 1 sheet sheet of puff pastry Store-bought puff pastry
  • 2 large large onions, thinly sliced Sweet onions are best for caramelizing
  • 2 tablespoons olive oil For cooking the onions

  • 4 ounces goat cheese, crumbled Can substitute with feta or dairy-free cheese
  • Fresh thyme for garnish Add freshness to the tarts

Preparation

  • Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the puff pastry and cut it into squares or circles.
  • Place the pastry pieces on a baking sheet lined with parchment paper.

Cooking Onions

  • In a large skillet, heat the olive oil over medium heat. Add the sliced onions and season them with salt and pepper.
  • Cook the onions slowly, stirring often, until they are beautifully caramelized, which should take about 20-30 minutes.

Assembling and Baking

  • Once the onions are caramelized, top each pastry with a generous portion of onions and crumble goat cheese on top.
  • Bake these treats in the preheated oven for 15-20 minutes, or until the pastries are golden brown.
  • Before serving, garnish with fresh thyme for an added touch.

Notes

These tarts can be served warm as an appetizer or paired with salad for a meal. Leftovers can be stored in an airtight container in the refrigerator for up to three days. To reheat, pop them in a 350°F (175°C) oven for about 10-15 minutes.
