  • 12.8 ounces Rice Chex Cereal
  • 1/2 cup Light Corn Syrup
  • 1/4 teaspoon Salt
  • 2 cups Light Brown Sugar, packed
  • 1 cup Unsalted Butter (2 sticks)
  • 1/2 teaspoon Baking Soda

Preparation

  • Prepare your workspace by laying two pieces of parchment paper on two baking sheets. Set them aside.
  • Pour the Rice Chex cereal into a large bowl and set it aside.
  • In a medium saucepan, combine the butter, brown sugar, corn syrup, and salt. Heat over medium-high until it starts to boil, about one minute.
  • The longer you let it boil, the harder and crunchier it will become.
  • Remove from heat and quickly stir in the baking soda. Your mixture will foam up—don't worry, that’s normal!
  • Pour this delightful caramel mixture over the Rice Chex and stir until every piece is well coated.
  • Microwave the mixture for one minute. Stir and repeat this process two more times, stirring in between each minute.
  • After the third minute, pour half of the mixture onto each baking sheet, spreading it out evenly. Allow it to cool completely.
  • Once cool, break the Caramel Chex Mix apart and store it in an airtight container. Your snack will stay fresh for up to five days.

Notes

Timing is key for crunchy texture. Experiment with boiling time. Mix well to ensure every piece is coated.
