  • 9 cups Rice Chex cereal
  • 1 cup white chocolate chips Can substitute with darker chocolate for richer flavor.
  • 1 cup caramel bits
  • 1 teaspoon vanilla extract
  • 1 pinch salt Add sea salt for extra flavor if desired.
  • 1 tablespoon apple pie spice Can be replaced with pumpkin spice for variation.
  • 1/4 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1/2 cup crushed dried apple chips Optional: swap with other dried fruits like cranberries or cherries.

Preparation

  • Measure out 9 cups of Rice Chex cereal and place it into a large mixing bowl. Set aside.
  • In a microwave-safe bowl, combine the white chocolate chips and caramel bits. Heat in the microwave at high power for 30-second intervals, stirring after each, until melted and smooth.
  • Add the teaspoon of vanilla extract and a pinch of salt to the melted mixture. Stir well to combine.
  • Pour the warm coating evenly over the Rice Chex cereal. Gently fold to ensure all pieces are well-coated.
  • In a separate bowl, whisk together the apple pie spice, powdered sugar, and granulated sugar until blended.
  • Sprinkle the sugar mixture over the coated cereal, mixing thoroughly for even coverage.
  • Carefully fold in the crushed dried apple chips, distributing them throughout the mix.
  • Spread the mixture onto parchment-lined baking sheets in a single layer. Allow it to cool completely at room temperature until the coating is set.
  • Once cooled, transfer the snack mix to an airtight container and store it at room temperature for up to a week.
