Caramel Apple Cheesecake Bars

Ingredients
  

For the crust:

  • - 2 cups graham cracker crumbs
  • - 1/2 cup unsalted butter melted
  • - 1/4 cup granulated sugar
  •  

For the cheesecake layer:

  • - 16 oz cream cheese softened
  • - 1/2 cup granulated sugar
  • - 2 large eggs
  • - 1 tsp vanilla extract
  •  

For the apple topping:

  • - 2 large apples peeled and diced
  • - 2 tbsp butter
  • - 1/4 cup brown sugar
  • - 1 tsp ground cinnamon
  • - 1/4 tsp nutmeg
  •  

For the caramel drizzle:

  • - 1/2 cup caramel sauce
  • - Optional: 1/2 cup chopped pecans or walnuts

Instructions
 

  • 1. Preheat oven to 350°F (175°C). Line a 9x13 baking dish with parchment.
  • 2. Mix graham cracker crumbs, butter, and sugar. Press firmly into dish. Bake 10 minutes and cool.
  • 3. Beat cream cheese and sugar until smooth. Add eggs and vanilla. Spread over crust.
  • 4. In skillet, cook apples with butter, brown sugar, cinnamon, and nutmeg until softened. Spread over cheesecake.
  • 5. Bake 30–35 minutes until center is set. Cool completely and refrigerate 2 hours.
  • 6. Drizzle with caramel sauce and sprinkle with nuts before slicing into bars.

Notes

Best served chilled. Try swapping graham crust with Oreos or adding streusel topping for variation.
