Ingredients
  

For the Chicken

  • 1.5 pounds boneless, skinless chicken breasts, thinly sliced
  • 0.5 cup Buffalo sauce (plus extra for drizzling)

For the Vegetables

  • 2 tablespoons olive oil
  • 1 medium onion, thinly sliced
  • 1 medium green bell pepper, thinly sliced

For Assembly

  • 1 cup shredded mozzarella cheese
  • 4 pieces hoagie rolls
  • 0.25 cup ranch or blue cheese dressing (optional, for drizzling)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Preparation

  • In a medium bowl, combine the thinly sliced chicken with the Buffalo sauce, coating the chicken well. Let it marinate for at least 10 minutes.

Cooking the Vegetables

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and green bell pepper. Cook for 4-5 minutes until softened and slightly caramelized. Remove from skillet and set aside.

Cooking the Chicken

  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the marinated chicken slices, spreading them out in a single layer. Cook for 5-7 minutes until fully cooked and slightly crispy around the edges. Season with salt and pepper to taste.

Assembly

  • Preheat the oven to broil. Slice the hoagie rolls open and place them on a baking sheet. Divide the cooked chicken evenly among the rolls and top with the cooked onions and peppers.
  • Sprinkle the shredded mozzarella cheese over the chicken and vegetables. Place the baking sheet under the broiler for 1-2 minutes, or until the cheese is melted and bubbly.

Serving

  • Drizzle extra Buffalo sauce and ranch or blue cheese dressing over the top if desired. Garnish with chopped parsley and serve hot.

Notes

For deeper flavor, let the chicken marinate for 30 minutes or longer. Using fresh chicken and vegetables enhances the taste. You can also try other cheeses like cheddar or pepper jack for extra flavor. If you have leftovers, store them in the refrigerator for up to 3 days and reheat in the oven at 350°F (175°C).
