  • 2 cups cooked rice or quinoa Prepare according to package instructions.
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup blue cheese crumbles
  • 1/4 cup ranch dressing Add more for serving if desired.
  • 1/4 cup sliced green onions For garnish.

Prepare Chicken Mixture

  • In a large bowl, combine the shredded chicken and buffalo sauce, mixing well.

Prepare Rice/Quinoa

  • Prepare the rice or quinoa according to package instructions.

Assemble Bowls

  • In serving bowls, layer the cooked rice or quinoa at the bottom.
  • Add a generous portion of the buffalo chicken mixture on top of the rice.
  • Top with shredded lettuce, diced tomatoes, blue cheese crumbles, and ranch dressing.
  • Garnish with sliced green onions before serving.

Notes
