Bobby Flay's Salisbury Steak

Ingredients
  

  • 1 pound ground beef (80/20 blend)
  • 1 large egg, lightly beaten
  • 2 tbsp grated Parmesan cheese
  • 2 tbsp breadcrumbs
  • 1 tsp minced garlic
  • to taste salt and black pepper
  • 2 tbsp vegetable oil
  • 16 oz sliced mushrooms
  • 1 large onion, thinly sliced
  • 1 tbsp tomato paste
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • 0.5 cup half and half or heavy cream
  • to garnish fresh parsley, chopped

Instructions
 

  • In a large bowl, mix ground beef, egg, Parmesan, breadcrumbs, garlic, salt, and pepper. Shape into four oval patties.
  • Heat vegetable oil in a skillet over medium-high heat. Cook patties 4–5 minutes per side until browned. Remove and set aside.
  • In the same skillet, sauté mushrooms and onions until soft and golden, about 8 minutes.
  • Add tomato paste, beef broth, Worcestershire sauce; simmer 3–4 minutes until slightly thickened.
  • Stir in half and half, return patties to skillet, coat with gravy, cover and simmer 5–10 minutes until cooked through.
  • Garnish with fresh parsley and serve hot.

Notes

For a lighter version, use ground turkey and light cream. This dish freezes well for meal prep. Add herbs like thyme for extra flavor.
