  • 1 baguette or similar bread for crostini

Preparation

  • Preheat the oven to 400°F (200°C).
  • Season the beef tenderloin with salt and pepper.
  • Sear the beef in a hot skillet with olive oil until browned on all sides.
  • Transfer to the oven and roast for about 15-20 minutes, or until desired doneness. Let it rest.
  • Meanwhile, slice the baguette and brush with olive oil.
  • Bake the bread slices in the oven for about 5-7 minutes, until golden and crispy.
  • Slice the rested beef thinly.

Assembly

  • To assemble, place a slice of beef on each crostini, top with a piece of Gorgonzola, and garnish with fresh herbs if desired.
  • Serve immediately.

Notes

Use a meat thermometer for perfect doneness; aim for 130°F (54°C) for medium-rare beef. Let the beef rest to retain juices, and consider variations with caramelized onions or different cheeses.
