  • 2 lbs boneless, skinless chicken breasts or thighs Thighs provide richer flavor.
  • 1 cup BBQ sauce, plus more for serving Choose sweet and tangy or smoky variety.
  • 1/2 cup chicken broth Low-sodium options can be used.
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil For sautéing.
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp kosher salt
  • 12 pieces soft Hawaiian rolls, split Holds the juicy chicken well.
  • 2 tbsp melted butter (optional for toasting rolls)
  • 1 cup coleslaw, store-bought or homemade (optional) Adds crunch.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) for toasting the rolls later. In a large skillet, heat the olive oil over medium heat.
  • Add the finely chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute.

Cooking

  • Combine the chicken with chicken broth, smoked paprika, salt, and black pepper. Pour the BBQ sauce over the chicken, covering completely.
  • Cover the skillet and simmer on low for 25-30 minutes until chicken is cooked through and tender. Alternatively, cook in a slow cooker on LOW for 3-4 hours.
  • Remove the chicken, shred it with two forks, and return it to the sauce, stirring to coat.

Serving

  • Arrange the Hawaiian rolls on a baking sheet. Brush with melted butter if desired and toast for 4-5 minutes until golden.
  • Spoon pulled chicken onto the bottom half of each roll, top with coleslaw if chosen, and cover with the top bun.
  • Serve warm with extra BBQ sauce on the side.

Notes

Store leftover pulled chicken in the refrigerator for up to 3-4 days, or freeze for up to 3 months. Keep Hawaiian rolls in a sealed bag for softness. Assemble sliders fresh for best texture.
