Ingredients
  

For the crust

  • 1 cup digestive biscuits, crushed
  • 1/2 cup unsalted butter, melted Ensure it is fully melted but not sizzling hot.

For the filling

  • 1 can sweetened condensed milk 14 oz can
  • 1 large banana, sliced Use fresh bananas for best flavor.

For the topping

  • 1 cup heavy whipping cream Chill the mixing bowl and beaters for fluffier cream.
  • 2 tablespoons sugar Adjust based on sweetness preference.
  • Chocolate shavings or cocoa powder for garnish Optional, for added decoration.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the crushed digestive biscuits and the melted butter until well mixed.
  • Press this mixture firmly into the bottom of a pie dish to form your crust.
  • Bake for 10 minutes, then let it cool completely.

Toffee Filling

  • In a saucepan, pour in the sweetened condensed milk and heat it over low heat.
  • Stir constantly for about 10-15 minutes until it turns a beautiful caramel color.
  • Once ready, pour the thickened toffee filling onto the cooled crust.

Assembly

  • Layer the sliced bananas over the warm toffee filling, distributing them evenly for each bite.
  • In a separate bowl, whip together the heavy cream and sugar until soft peaks form.
  • Gently spread this whipped cream over the bananas, making it smooth and fluffy.
  • Sprinkle with chocolate shavings or dust with cocoa powder for a beautiful finish.
  • Refrigerate the pie for at least 1 hour before serving to let all the flavors meld together.

Notes

Store leftover slices covered in plastic wrap or aluminum foil in the refrigerator for up to 3 days. If freezing, note that the cream may not thaw perfectly.
