Ingredients
  

Main Ingredients

  • 1 lb boneless, skinless chicken breast Cut into bite-sized pieces.
  • 1 cup cooked rice White, brown, or cauliflower rice.
  • 1 cup mixed veggies Broccoli, bell peppers, carrots. Feel free to switch based on availability.
  • 2 tablespoons olive oil For sautéing the chicken.
  • to taste salt and pepper For seasoning the chicken.

For the Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha Adjust for spice level.
  • 1 tablespoon honey For sweetness.
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice For acidity.

Instructions
 

Preparation

  • Cook your rice according to the package instructions and set aside.
  • Cut the chicken breast into bite-sized pieces and season with salt and pepper.

Cooking

  • Heat olive oil in a large skillet over medium-high heat and sauté the chicken until golden brown and cooked through, about 6-8 minutes.
  • In a small bowl, mix together the sauce ingredients: mayonnaise, sriracha, honey, garlic powder, and lime juice. Taste and adjust flavors as needed.
  • Add the mixed veggies to the skillet and cook for an additional 2-3 minutes until tender but still crisp.
  • Remove from heat and pour the sauce over the chicken and veggies, stirring to coat.
  • Serve over rice and garnish with extra sriracha or chopped green onions if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For a fresh taste, reheat and add extra sauce if available.
