  • 2 large eggs Must be at room temperature.
  • 1 teaspoon vanilla extract Optional but recommended.

Dry Ingredients

  • 1 cup granulated sugar Brown sugar can offer a deeper flavor.
  • 2 cups all-purpose flour Can be replaced with gluten-free flour blend.
  • 1 teaspoon baking soda Ensure it’s fresh for effectiveness.
  • 1/2 teaspoon salt Essential in baked goods.
  • 1 teaspoon cinnamon Adjust according to personal taste.
  • 1/4 teaspoon nutmeg Adjust according to personal taste.

Optional Ingredients

  • 1 cup chopped walnuts or pecans Can be replaced with chocolate chips.

Preparation

  • Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  • Mash ripe bananas in a large bowl until smooth.
  • Add the melted butter to the mashed bananas and mix thoroughly. Stir in the sugar, eggs, and vanilla.
  • In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  • Gently fold the dry mixture into the wet ingredients until just combined.
  • Fold in optional nuts or chocolate chips if using.

Baking

  • Pour the batter into the prepared loaf pan and bake for about 60 minutes, or until a toothpick comes out clean.

Notes

Store in an airtight container at room temperature for up to 4 days, or freeze for longer storage. Reheat slices in the microwave or enjoy straight from the freezer.
