  • 4 pieces boneless, skinless chicken breasts
  • 1 cup balsamic vinegar
  • 1 cup fresh figs, quartered or chopped dried figs Feel free to use dried figs if fresh are not in season.
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh thyme or rosemary for garnish (optional)

Preparation

  • Season the chicken breasts with salt and pepper on both sides.
  • In a large skillet, heat olive oil over medium-high heat.
  • Add the chicken breasts to the skillet and cook for about 5-6 minutes on each side until golden brown. Remove the chicken and set aside.
  • In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in the balsamic vinegar and bring it to a simmer.
  • Add the quartered figs and honey to the skillet. Stir well to combine.
  • Place the seared chicken breasts back into the skillet, coating them with the glaze.
  • Reduce heat to low, cover, and simmer for another 10-15 minutes, or until the chicken is cooked through and the glaze has thickened.
  • Ensure the chicken reaches an internal temperature of 165°F (75°C).
  • Remove the skillet from heat. Garnish with fresh thyme or rosemary if desired before serving.

Notes

Allow the glaze to simmer low and slow to intensify the flavors. Marinating the chicken in balsamic vinegar and olive oil beforehand enhances flavor. Avoid moving the chicken around too much while searing for a perfect crust.
