  • 1 teaspoon pure vanilla extract For added sweetness.
  • 1 teaspoon ground cinnamon Essential for flavor.
  • 1/4 teaspoon kosher salt Balances sweetness.
  • Vanilla ice cream, Greek yogurt, or heavy cream (for serving) Choose preferred topping.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a small bowl, combine the olive oil, maple syrup or honey, vegetable broth, lemon juice, coconut sugar, vanilla extract, cinnamon, and salt.
  • Place the peach halves cut-side up in a baking dish and pour the sauce over them.

Baking

  • Bake the peaches for 25-30 minutes, or until tender and slightly caramelized.

Serving

  • Serve the baked peaches warm with a scoop of vanilla ice cream or a dollop of Greek yogurt.

Notes

Use very ripe peaches for optimal flavor, and coat peaches well with sauce. Leftovers can be stored in the fridge for up to three days and reheated at 350°F for about 10 minutes.
