  • 1/2 cup honey Opt for pure, raw honey for the best flavor and health benefits.
  • 1/4 cup Dijon mustard Milder than yellow mustard; can substitute with whole grain mustard for a spicier kick.
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, for garnish (optional) Adds color and flavor.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a baking dish with cooking spray or olive oil.
  • In a mixing bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, salt, and black pepper until well combined.
  • Place the chicken breasts in the baking dish and pour the honey mustard mixture over them, ensuring they are well coated.
  • Let the chicken sit for 15-30 minutes in the marinade to enhance flavor absorption.

Cooking

  • Cover the dish with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Baste the chicken with the pan juices halfway through baking to keep it moist.
  • Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before slicing.
  • If desired, sprinkle fresh parsley on top before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. For freezing, wrap individual pieces tightly and consume within 3 months. To reheat, thaw overnight and warm in the oven.
