Baked Cranberry Brie Bites

Ingredients
  

Puff Pastry Base

  • 1 sheet puff pastry, defrosted Make sure to thaw your puff pastry completely before using.

Filling

  • 4 oz. brie cheese Place brie in the freezer for 10-15 minutes for easier cutting.
  • ½ cup cranberry sauce
  • Candied pecans (optional) Garnish if desired.
  • Fresh rosemary sprigs (optional) Garnish if desired.

Instructions
 

Preparation

  • Preheat your oven to 375 degrees and spray a mini muffin tin with cooking spray.
  • Unroll one sheet of puff pastry and cut it into 16 squares.
  • Place each square in your prepared muffin tin.
  • Take the brie out of the freezer and cut it into cubes.
  • Place one cube in the center of each muffin cup and spoon a small amount of cranberry sauce over the top.

Baking

  • Bake for 15-18 minutes or until the puff pastry is golden brown.
  • Once done, take the pan out of the oven and let the bites cool for a few minutes.
  • Run a sharp knife around the edge of each cup and pop them out of the tin.
  • Garnish with chopped candied pecans and fresh rosemary if desired.
  • Serve immediately!

Notes

These bites are best served warm. You can store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350 degrees for a few minutes until warmed through. Variations include using different flavors of jam or types of cheese, adding cooked sausage, or diced apples for a savory twist.
