Ingredients
  

For the cheesecake filling

  • 8 ounces mascarpone cheese
  • 1/2 cup Baileys Irish Cream Can substitute with another liqueur or omit for non-alcoholic version.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

For coating and assembly

  • 2 dozen chocolate-covered butter cookies
  • Chocolate for coating (dark, milk, or white)

Preparation

  • Crush the chocolate-covered butter cookies in a bowl until they become fine crumbs.
  • In a separate bowl, mix the mascarpone cheese, Baileys Irish Cream, powdered sugar, and vanilla extract until smooth and creamy.
  • Gradually stir the crushed cookie crumbs into the mascarpone mixture until well incorporated.
  • Scoop out small portions and roll them into balls.
  • Chill the balls in the refrigerator for about 30 minutes to firm up.
  • Melt your chocolate over a double boiler or in the microwave, then dip each cheesecake ball into the chocolate, coating evenly.
  • Place the chocolate-covered balls back in the refrigerator until the chocolate is set.
  • Serve chilled.

Notes

Dust with cocoa powder or drizzle melted chocolate on top for garnish. Pair with fresh berries or vanilla ice cream.
