  • 6 large large eggs
  • 1 cup cooked potatoes, diced
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheese (cheddar or your choice) Feel free to choose your preferred cheese
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil For cooking

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • Stir in the diced cooked potatoes, crumbled bacon, and shredded cheese.

Cooking

  • Heat olive oil in an oven-safe skillet over medium heat.
  • Once hot, pour in the egg mixture and cook for about 5 minutes without stirring, letting the edges begin to set.
  • Transfer the skillet to your preheated oven and bake for 15-20 minutes, or until the frittata is fully set in the middle.

Serving

  • Remove from the oven, allow it to cool for a few minutes, then slice it up.
  • Garnish with chives if you’d like, and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. You can also freeze individual slices wrapped tightly for up to 2 months.
