Ingredients
  

  • 4 large flour tortillas
  • 6 slices bacon cooked and crumbled
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella
  • 1 tbsp butter or oil
  • salt and pepper to taste

Instructions
 

  • Cook bacon until crisp, drain, and crumble.
  • Scramble eggs with butter, salt, and pepper until just set.
  • Assemble quesadillas with eggs, bacon, and cheese between tortillas.
  • Cook in skillet over medium heat until golden and crispy on both sides.
  • Slice into quarters and serve with salsa or sour cream.

Notes
