  • 8 slices thick-cut bacon chopped (225 g)
  • 2 tbsp butter 30 g
  • 3 cloves garlic minced
  • 3 tbsp all-purpose flour 25 g
  • 4 cups chicken broth 960 ml
  • 1 cup heavy cream 240 ml
  • 16 oz potato gnocchi 450 g
  • 2 cups sharp cheddar cheese shredded (200 g)
  • 2 green onions sliced
  • Salt and pepper to taste

Instructions

  • Cook chopped bacon in a large pot until crispy. Remove and set aside.
  • Melt butter in the same pot, add garlic, and sauté until fragrant.
  • Stir in flour to make a roux and cook for 1 minute.
  • Gradually whisk in chicken broth and bring to a gentle simmer.
  • Add gnocchi and cook for 4–5 minutes until tender.
  • Stir in heavy cream, cheddar cheese, and bacon. Mix until creamy.
  • Season to taste and serve hot, garnished with green onions.

Notes

Use freshly shredded cheddar for smooth melting. For a lighter version, swap heavy cream for half-and-half. Serve with garlic bread rolls for the ultimate comfort meal.
