Ingredients
  

  • 2 Honeycrisp apples sliced thin
  • Mixed greens arugula-spinach blend or any preferred greens
  • 1/3 cup feta cheese crumbled
  • 1/3 cup toasted pecans or walnuts chopped
  • Dried cranberries or cherries small handful
  • Red onion sliced super thin (optional)
  • Simple dressing maple-Dijon vinaigrette
  • Freshly cracked pepper pinch

Instructions
 

  • Toss mixed greens into a big salad bowl.
  • Layer on the apple slices.
  • Sprinkle on the feta and nuts.
  • Scatter cranberries (or cherries) on top.
  • Add red onion slices if desired.
  • Drizzle with dressing right before serving and gently toss to combine.
  • Serve immediately to prevent browning of the apples.

Notes

To keep apple slices fresh, soak them in cold water with lemon juice before using. Dress the salad just before serving to maintain crispness.
