Ingredients
  

For the crust:

  • - 2 cups cinnamon graham cracker crumbs
  • - 1/2 cup unsalted butter melted
  • - 1/4 cup granulated sugar
  •  

For the cheesecake filling:

  • - 24 oz cream cheese softened
  • - 3/4 cup granulated sugar
  • - 3 large eggs
  • - 1 tsp vanilla extract
  • - 1/2 cup sour cream
  • - 2 tbsp all-purpose flour
  •  

For the apple layer:

  • - 3 apples peeled and diced
  • - 2 tbsp unsalted butter
  • - 1/4 cup brown sugar
  • - 1 tsp cinnamon
  • - 1/4 tsp nutmeg
  •  

For the crumble topping:

  • - 1 cup all-purpose flour
  • - 1/2 cup brown sugar
  • - 1/2 cup cold unsalted butter cubed
  • - 1 tsp cinnamon

Instructions
 

  • 1. Preheat oven to 325°F (160°C). Mix crumbs, sugar, and melted butter. Press into springform pan. Bake 10 minutes and cool.
  • 2. Beat cream cheese and sugar until smooth. Add eggs one by one. Mix in vanilla, sour cream, and flour. Spread over crust.
  • 3. In skillet, cook apples with butter, brown sugar, cinnamon, and nutmeg until softened. Spread over cheesecake filling.
  • 4. Make crumble topping by mixing flour, sugar, butter, and cinnamon until crumbly. Sprinkle over apples.
  • 5. Bake 55–60 minutes in a water bath until edges are set but center is slightly jiggly. Cool completely and chill 4 hours or overnight.

Notes

Best made a day ahead for flavor to deepen. Add caramel drizzle for extra sweetness.
