Amish Breakfast Casserole

  • 1 lb breakfast sausage (bulk)
  • 6 large eggs
  • 2 cups milk (whole or 2%) Whole milk provides the best custard
  • 1 tsp salt Can reduce to half for lower sodium
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 cups cubed bread (stale or day-old) White or French bread is ideal
  • 2 cups shredded cheddar cheese Reserve a handful for topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
  • Heat a skillet over medium. Add the breakfast sausage and cook, breaking it into pieces, until browned and cooked through. Drain any excess fat and set the sausage aside to cool slightly.
  • In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until fully combined.
  • Add the cubed bread and cooked sausage to the egg mixture. Stir gently to ensure the bread soaks up the custard evenly.
  • Fold in the shredded cheddar cheese until distributed through the mixture.
  • Pour the mixture into the prepared baking dish, spreading it into an even layer.

Baking

  • Bake for 45–50 minutes, or until the center is set (a knife inserted should come out mostly clean) and the top is golden brown.
  • Remove from the oven and let the casserole rest for 5–10 minutes before slicing and serving.

Notes

Best served with a green salad and fresh fruit. Adjust seasoning and add toppings as desired. This casserole can be prepared the night before; just adjust bake time for a cold casserole.
